It's sleek modern and boasts two impressive Rauchenberg's within its contemporary and very upscale confines. Reservations are imperative. Olives, 693-7223, open for lunch and dinner is situated to overlook Bellagio's magical fountain show. Like its name, the cuisine features olives in all varieties. From the moment they bring the olive appetizers to the desert this place is a treat. Get a table #10 or #11 by the window and enjoy.
Picasso, 693-7223, 6:30pm-9:30pm, $32 million worth of Picassos on the walls and pricey but incredible nouvelle cuisine on the tables. It has a vaulted ceiling and a great view of the lake. Another great chef from the Diner's hometown of San Francisco, Juan Serrano has taken the Mediterranean style to a new level. Close your eyes (though that's the last thing you want to do) and you will think you're along the north the sea's north shore. Prime is perfect for watching the fountain shows in front of the hotel. Another superb chef, Jean-Georges Vongerichten's highly refined, and expansive culinary palette is all over this place. There is no doubt that your palate will be amused and well sated.
